Winegrowing estate of 28 ha vines, carried out in reasoned fight, any weeding chemical fertilizer nor. Owners sympathetic nerves and impassioned, Jean-Luc Quinquarlet, dentist with Saint-Andrew de Sangonis, and Martine, his wife, reprocessed from Poste, began their activity from independent vine growers in 2002, after several years of work in cooperative wine cave.
You will like like us this Slope-of-Languedoc Terrasse of Larzac Envol de Familongue 2012, powerful, with the intense nose (blackcurrant, scrubland, morello cherry), complex, of a long final in mouth, tasty, all in harmony. the 2010, gold medal Mâcon 2012, is remarkable, of color crimson, quite vigorous, of a beautiful frame, where intermingle with the notes of red small fruitsgood ripe and liquorice, powerful, all in mouth and traditional. Red Slope-of-Languedoc Les 3 Naissances 2010, gold medal in Vienna 2012, a wine which allured me with these notes very characteristic and persistent of smoked and spices, with powerful but fine tannins, rich person with the nose as with the palate, of excellent evolution like Carignan de Familongue 2012, with the very open nose of underwood and blackberry, of mouth marked by the red fruits
Envol de Familongue white 2012, resulting from grapes coming from two soils: one north of Saint-André-of-Sangonis, which is composed of gravel limestones of cryoclastic origin integrated in a sandy ground argilo screen; the other in the south, with a low register ground of the high river old terraces makes rollers rolled in a sandy screen. These two qualitative soils are not very rich and very draining. That gives this tempting wine, suave, all in flavors and promptness, with the persistent scents, which combines freshness with the flexibility. Rosé Eté with Familongue is a success, with the nose of strawberry, greedy and fond of delicacies, all in mouth.

A vineyard in the same family without interruption since 1580. The cellar is installed in the middle of the old village, in the old commun runs of the castle of Lavérune. The vineyard of 52 ha whose 40 ha in AOC, is carried out in reasoned culture, and the white grape vines are in the course of conversion into organic farming.
Beautiful Slope-of-Languedoc fermented Prestige 2010, soil of Saint-Georges d' Orques, Syrah and Mourvèdre, type of vines matured 12 months separately out of barrels and 12 months after assembly, coloured and framed, with the nose dominated by the red small fruitswith core and of the notes of smoked, is a powerful, for ageing wine. The 2009, with the notes of black cherry and underwood, associate structure and roundness, spiced well as it should be, with rich and tasty tannins, is a vigorous wine which continues its evolution. There is still this Slope-of-Languedoc “fermented 400” 2010, soil of Saint-Georges d' Orques, Syrah and Mourvèdre for this matured vintage 24 months out of barrels of oak, still young, with the nose of underwood and morello cherry, associating smoothness and frame, with at the same time rich and tasty tannins, a wine all in mouth, where one finds these delicate nuances of truffle and prune, excellent evolution.Grès of Montpellier red 2011 (Syrah and Mourvèdre), of garnet-red color, rich and structured, with the nose where dominate of the spice and blackcurrant notes, a long wine in mouth and of very good guard.
Very pretty Chardonnay 2012 (first year out of Organic wine), a very successful wine, with the nose of white flowers and grape fresh, full and suavelong-lived and persistent, also very accessible like this Slope-of-Languedoc Tradition rosé 2013, of color clear cherry, with the very fruity nose, with this tempting mouth where freshness and length mix.

We have about thirty hectares of vines, with an annual production of 200,000 bottles. The winegrowing estate is in the middle of the hills of the edge of the Cevennes.”
Here is beautiful Languedoc Pioch of Oule Blanc 2012 (resulting from Demeter grapes, sowing by a leaven made starting from yeasts indigenous, fermentation out of new barrels for half ofVermentino, majority to 66%, and out of tanks for other half, like white Grenache, many bâtonnages…), with this very complex bouquet of fishing and ripe apricot, all in subtlety, with this persistent spiced key, a wine all in nuances.

In charge of the First Classified High-class wines. With the edge of Parc Régional of HautLanguedoc, the Miquel family manages since the end of XVe century the 60 ha of the property, including 27 reserved for the vine. The modernity and the tradition of the techniques of work, associated with an intact environment, allow making of typified wines as they are liked.
“If the year 2012 is very interesting, specifies us Raymond Miquel, the 2013 is a superb year inLanguedoc. In Muscat, it is one of the most beautiful years of these ten last years!”
Remarkable red Minervois vintage Jean Miquel Vieilles Vignes 2011 (ground argilo-limestone, southern exposure full, altitude 300 m, 80% Carignan and 20% Grenache, carbonic assembly of maceration and traditional wine making, 15 month ageing out of barrels), fleshy, a beautiful wine which develops flavors of blackcurrant and violet, which combines frame and flexibility, quite firm, with the nuances of persistent plum and liquorice to the palate, for ageing like Minervois Marie-Therese 2011 (75% Syrah and 25% Grenache, carbonic assembly of maceration and traditional wine making, 12 months ageing out of barrels), a wine of a pretty aromatic concentration with these nuances of violet and ripe raspberry, full mouth.
Very good Minervois red 2012, of full and well balanced frame, harmonious, a wine which combines power and flexibility. Pretty IGPMuscat dryness 2012, floral, of suave and fresh mouth at the same time, a perfect wine on asparaguses.
Taste Muscat Saint-Jean-of-MinervoisMuscat with small grains, resulting from old vines, fruity and fatty in mouth, with a final molten and tasty, a quite pretty wine where the citrus fruits dominate and lis.

In charge of the First Classified High-class wines. To the North-East of Carcassonne, in thecentral zone of Minervois, soil “Balcons of Aude says”, this medieval strengthened farm is a winegrowing estate of only one holding of 158 ha. For better understanding the specificity of eachvintage, it is necessary to know of it the origins, type of vines and the type of ageing. The Winegrowing estate is pressed on a decoration of exposed hillocks full midday, witness of the old relief to the very strong slopes where no culture is possible, only the pines of Alep and the Mediterranean vegetation are clutched on the red grounds of the hills. The vines are spread out over two levels over a reversed relief, the high terraces with the oldest grounds and the low terraces with the youngest grounds. The grounds are argilo-limestones in the tops, the flint levels on the terraces, and the sandstone on the slopes.
“In 1996, Roland Augustin tells, we resold our 3 ha 80 of Champagne and sought a property to have more independence and to develop us. We sought a pleasant area and with the qualitative potential. We visited approximately 80 properties in the south of France while starting towards the Coast-of-Rhone… that took to us more than two years before finding ChâteauFabas. With my two sons, we are a family structure, and that enables us to work with much flexibility and reactivity. We do not seek the year effect, I am of Champagne origin and the Champagne one work like that. I created a Fabas taste and make a point of preserving it to have a qualitative regularity. We have a very cordial reception here, with a vault of sale, naps open all the year, it is a real advantage for the customers to be received by the family. We have in heart to maintain very quality-price positive ratios, vis-a-vis exorbitant prices inLanguedoc, I think that our specificity should be kept: “without authenticity, not of emotion.”
“Marketing year 2013 occurred very well contrary to other areas, tells us Loïc Augustin. The 2013 profited from definitely higher climatic conditions. The autumn was shone upon, not of rain, which enabled us to await optimal maturity. The grape harvest was late because of the delay of flowering and was very shifted. This 2013 have the characteristic to have alcoholic strengths weaker, which makes it possible to have less heavy wines, very fruity with more tender tannins and much of sucrosity. Thanks to pluviometry, we did not know hydrous stress this year. The wines are much less jams, less hot than usually, one obtains fresher fruit flavors, it is one year which much will like, with wines pleasant to consume earlier, not great guard. Tannins are very silky, very round, ageing will be a little lighter because the wines are already harmonious. It is already the style of wine which we produce here in Château Fabas, of the flexible and balanced wines, and this 2013 are, quite naturally, in this line. Blancs 2013 have flavors of citrus fruits thanks to the type of vine Vermentino, rather dashing, very fresh. We made large investment on the level of the cellar, planted much these last years, arrive at 63 ha: it was necessary to increase the capacity of reception of the grapes! We thus bought a group of cold much more powerful, an automatic sort table to avoid to the maximum the herbaceous tastes and to be able to carry out longer macerations to extract as much as possible and, finally the purchase of a new pneumatic press.”
Superb Minervois fermented Seigneur 2009, born from the complexity of type of vines established, since more than 30 years, southern and controlled talks full with 25 hl/ha with output. Syrah, 60%, dominant in this vintage, give on this soil of the very scented grapes.Grenache, 40% has a very major rooting which ensures good regularity and maturity to him. The wine is fleshy, dense, with these fruit jams scents which are found in mouth, and continues a very beautiful evolution.

At the top. The vineyard extends around the village from Pépieux and on the first slopes from the Noire mountain, in AOC Minervois. The climate is very dry there and hot but the wind which goes down from the mountain brings freshness and perfumes. The slopes of Pépieux offer an exceptional soil giving of the elegant wines having a freshness and an acidity noticed by the experts. It is there that was born the “wine from Cathar” which made the reputation of the village and one finds there today Syrahs with the flavors of blackcurrant and liquorice. The Winegrowing estate also profits from vines on Terroir of Livinière, classified first “name village” of the AOC of Languedoc. Benefitting from this exceptional situation, Renee and Benoît Laburthe returned to work the vines of their grandfather, in 1986.
One gives pleasure with his Minervois Les Terres Fines 2010 (40% Grenache, 25% Mourvèdre, 20% Syrah and 15% Carignan), of a beautiful constant color and sinks, with the nose dominated by the red small fruits with core and of the notes of smoked, a powerful wine and of very good evolution, a great success. The 2009 are of beautiful matter, with quite firm tannins, the nose dominated by plum and the underwoods, have much structure. Minervois Les Terres Rouges 2010, of color intense, dense crimson in mouth, with firm and well balanced tannins, with these persistent notes of smoked, blackcurrant and spices. Beautiful Minervois fermented Les Cailloux Blancs red 2009.100% Syrah, resulting from Terroir of Lavinière, with nuances of violet and liquorice, rich color, quite traditional, combining smoothness and structure, a wine which continues its very beautiful evolution. Minervois Les Gravettes red 2012, ageing on dregs out of tanks, coloured, quite vigorous, all in aromatic nuances, is quite traditional.
Excel Minervois Perle of dew 2012, Cinsault and Grenache, with the nuances of flowers and spices, associating richness and flexibility, of a very beautiful balance with the palate. Taste Terre de Pepusque 2010, a new vintage resulting from Syrah, of beautiful color, with the cherry notes and underwood, with rich tannins.

At the top. This sucker of reference, remarkably equipped, also collects the rewards. The vineyard extends on some 650 ha from schistous slopes, in terraces, southern talks full. The grounds on which the culture of the vine developed, count among oldest of France. Indeed, they go back to the beginning of the primary era for the majority of them. In the geological series (Dévonien, Ordovicien, and Viséen), one finds what the wine growers call: the schists (80% of the wine grounds of the commune). The manualvintage allows a sorting in the pieces and a reception of the grapes without any deterioration. The plate of 32 tanks makes it possible to work out the red wines in carbonic maceration whole bunches. For the maceration in picked off vintage, one makes use of controlled tanks autopigeantes and thermo (pneumatic presses). Their wine storehouse of ageing of 900 barrels of French oak is reserved for the ageing of their vintages of prestige.
One thus appreciates here this Saint-Chinian Roquebrun red Les Fiefs d' Aupenac 2011 (60% Syrah, equal shares of Grenache andMourvèdre), quite vigorous, where dominate of the ripe blackcurrant and leather notes, with molten but quite rich tannins, combining color and matter, of a pretty spiced final, excellent evolution. Tasty Saint-Chinian Roquebrun red Baron d' Aupenac (80% Syrah, equal shares of Grenache and Mourvèdre), wine making and carbonic maceration in 23 days long, ageing out of barrels of oak 18 months, full in mouth, with currant and pepper notes, fleshy cuvaison dense and concentrated, of excellent guard. Saint-Chinian Les Fiefs d' Aupenac white 2012 (80% Roussane and 30% white Grenache), compartmental selection of old vines, is suave, with the fresh nut notes, of full mouth, charmer by his structure and his persistence of flavors. Saint-Chinian Roquebrun Roches Noires Macération 2011, regularly preceded, has a cooked fruit nose and humus, balanced tannins, an at the same time powerful mouth, silky and scented, perfect on nice of pig to sage. Taste Saint-Chinian Seigneur d' Aupenac white 2010 (70% Roussane and 30% white Grenache), tempting, with hazel nut and pear scents, of a beautiful balance between freshness, the flexibility and the fruity one. Saint-Chinian Col of rosé Orb 2013 is of beautiful color, with these nuances of fishing and small dried fruits. At the same time taste the IGP Haute Vallée of Orb Terrasses d' Aupenac Viognier, suave and dry, where the fruits (citrus fruits) and the fresh flowers intermingle, really very succeeded.
