In charge of the First Classified High-class wines. A family property since 4 generations. Henri Gualco started to put the wines of the winegrowing estate in bottles since 1973 and took an active part in his development to transmit the property to his Christophe son. Established on an total surface area of 77 ha vines, the winegrowing estate has a soil argilo-limestone, stony whose majority of the pieces is exposed full south. The oldest pieces have more than sixty years and make it possible to work out the vintage Vieilles Vignesand the selection of Bois of Dames. 
Superb Corbières Bicentenaire Vieilles Vignes 2011, resulting from a soil stony argilo-limestone: Black GrenacheCarignan andMourvèdre, old vines 50 year old, wine making in whole grains, 8 months of ageing out of barrels of oak, very small outputs (28 hl/ha). The whole explaining this wine of intense color, with powerful flavors where the red spices, fruits and the wild bays intermingle, of complex mouth, fleshy and structured, for ageing, naturally. Excel Corbières Bois of Dames red 2011, with the nose present with notes of violet and prune, a wine rich color, of beautiful garnet-red color, dense and traditional as it should be. 
Château Étang of Colombes Bois of white Dames, coming from a pellicular maceration from white Grenache and Bourboulenc, very scented with nuances of lily, nut and of apple, suave mouth.   Pretty Corbières white 2013, with the delicate nose (hawthorn, hazel nut), all in roundness and persisting in mouth, with this note of freshness characteristic, like Corbières Gris Colombes, very out of fruits, very round in mouth, structured and scented, all in subtlety.

In charge of the First Classified High-class wines. Large-Caumont Château is one of the more vast domains of Corbières with 100 ha of vines on grounds argilo-limestones in terraces and very filtering low register grounds (type of vines SyrahGrenache and Carignan of more than 50 years). There existed already at the time Roman and had been baptized Villa Manzanetto. It is into 1906 that Louis Rigal founder of famous Roquefort Rigal buys it then transmits it to his Louis son, his wife Francoise Rigal takes over with the beginning of the year 1980. His/her Laurence daughter joined it in 2003 and ensures since the management of the winegrowing estate. For about thirty year, significant efforts have been carried out in order to modernize the buildings, to diversify encépagement, to optimize the cultures, to renovate the cellar, to refine the wine makings. 
Very typified, this remarkable red Corbières Impatience 2011 (45% black Carignan, 45% Syrah and 10% black Grenache, with an ageing out of barrels 12 months for 40% of the assembly), a wine with the nose where intermingle with the ripe fruit and cinnamon notes, powerful, a beautiful length.   Corbières fermented Spéciale 2011, of a color dark ruby, with the flavors of violet and liquorice, is of powerful but silky mouth. Corbières Réserve of Laurence red 2011, black Carignan old women vines vinified out of grape entireties 20%, black Carignan picked off traditional wine making 10%, Syrah picked off, traditional wine making 40%, black Grenache picked off traditional wine making 20%, of beautiful frame, is scented (blackcurrant, pepper), of silky and intense mouth, excellent evolution.Corbières Château of Grand Caumont Tradition rosé 2013 has nuances of apricot and a spiced note, of tempting mouth. Pretty CorbièresTradition white 2013, with the notes of dried fruits, round and persistent, where the fruits and the fresh flowers intermingle in mouth.

At the top.   a small family property of less than 10 ha located since of several generations in tiny Hameau de Gasparets at deepest of Corbières. Pierre Martinolle (83 years) regularly helped by his children Jean-Pierre and Francoise, realizes there in a way artisanal and reasoned since many decades of the authentic and exceptional wines in the respect of the traditions which were transmitted to him.
Arid grounds of secondary and tertiary origin with outcrop of dolomitic limestones and sandstone, sunny exposure of Corbières (and Corbières-Boutenac), swept by Cers (a wind of cold, violent and protective Nord) and Marin (coming from close Mer the Mediterranean) which brings its soft and hot moisture.
Traditional and biological artisanal wine making out of tanks cements centenaries for the reds, out of Inox tank for the white and rosé. Ageing and ageing ferment Inox of it and partially was of oak for Corbières-Boutenac. The rosé ones are carried out by bleeding at controlled temperature. The white are carried out by direct pressing cold.

For the moment, one gives pleasure with this remarkable Corbières Boutenac Fût of oak 2011, of color cherry supported, with the powerful flavors of cooked fruits and underwood, firm, with full tannins, of ripe mouth.   the 2010, gold medals with the contest ofCorbières and Argent to the world contest of Brussels and Argent SMV Canada, color intense, with tannins very present, of a supported structure, very fleshy, with the nuances of black fruits jams, of leather, underwood, at rock-bottom prices.   Superb 2009, bronze medalMâcon 2012, of nice color intense crimson, with the scents of violet and liquorice, powerful mouth. Red Corbières Organic 2013, of color cherry supported, with the powerful perfumes of cooked fruits and underwood, is tasted already very well, with tannins firm and melted at the same time. Corbières Bio white, Rolle and Bourboulenc excel, with the flavors quite present of ripe yellow fruits, nuances of honeysuckle, a pretty wine finely bouqueté, all in seduction like the rosé one, of fond of delicacies mouth dominated by fresh apricot.

The vineyard is spread out in terraces vis-a-vis the sea over an arid and very stony ground (50 ha). 
“2014, a great year, precise-tone, after one year 2013/2014 particularly dry, it was difficult before the summer to imagine this year. The storms of at the beginning of August gummed an important hydrous stress and allowed particularly Syrahs and Grenaches to develop under the best conditions. One very sunny and hot September made it possible to obtain exceptional maturities.
The red wines thus present a color to the intense reflections crimson, a particularly rich aromatic concentration and already silky tannins. The white and the rosé ones are particularly fruity and have a vivifying freshness.”
Superb Slope-of-Languedoc red Clape Réserve of Château 2011 (48% Syrah, 12% Grenache, and 40% Mourvèdre, on ground argilo-limestone, ageing out of new barrels of oak 12 months, 4 weeks long cuvaison), of color crimson, flexible and vigorous at the same time, with the connotations of cherry, underwood and spices, with packed tannins. Slope-of-Languedoc red Clape fermented of Ducs Fleury Rouge 2012,   medal of Argent contest Grands Vins de Mâcon, with its notes of ripe cherry, musk and liquorice, of melted mouth, is a wine of excellent evolution. Slope-of-Languedoc white Clape vintage Aimée de Coigny 2013.45%   Roussane, 45%   Bourboulenc, 10%   white Grenache, scented (citrus fruits, hazel nut), mixes roundness and nervousness, elegant, all finally. Very pretty Gris 2013 (GrenacheCinsault), all in mouth like Corail 2013 (SyrahCinsaultMourvèdre), awards a medal to at the same time Argent Mondial of Rosé, combining nervousness and roundness, sharp and round, of a very pretty final.

At the top.   Six generations of vine growers, vineyard of 33 ha on grounds argilo-limestones, planted of black GrenacheSyrah and Carignan, with an average age of the vines of more than 60 years.

You will appreciate this Fitou Boulière 2012, resulting for 1/3 with equal shares from CarignanMourvèdre and black Grenache, vines in Organic farming, a filtered wine neither, nor stuck, of intense color, scented well (fresh fruits, humus…), which develops width and roundness with the palate, with leather and cooked fruit connotations.   Superb Fitou fermented Ancestrale 2011 (black Carignan and black Grenache on grounds argilo-limestones), of major color, quite vigorous, with the black fruit flavors with notes of roasted, a pretty concentration, slightly spiced in mouth as it should be, of excellent guard. Fitou fermented Les Mégalithes 2011 (95% of oldest Carignanof the winegrowing estate), of beautiful color to the reflections garnets, of fleshy and cordial mouth, with dense tannins and a complex final where one finds blackberry and liquorice, of very good evolution, of course. Fitou fermented Jean Sirven 2011, Carignan majority,Grenache black and Syrah, a vintage created in tribute to the back-back-large-father who was gold medal with the exposure of Paris in 1900, a coloured and framed wine, with the nose dominated by the red small fruits and the liquorice, intense, vinified very well, generous in mouth where develop plum notes cooked and of smoked. More flexible, red Fitou Origines 2012 feels the small fruits (currant and morello cherry), is of rich and traditional mouth.  
Rivesaltes beautiful Scented with amber, where the macerated fruit connotations intermingle, ideal on a melon and ham of mountain, very typified like this tempting Muscat of Rivesaltes, very floral, full, very scented with the palate.   Taste the IGP white Méconnu 2013,bouqueté, of nice color, all in flavors, sharp and round at the same time, with this delicate peppered final. Part of this ancestral winegrowing estate was taken again by the Eychenne family since 3 generations. Since, Viera and Yves work to emphasize the various soils which compose it. The vineyard consists of a great type of vine diversity (SyrahMerlot, Cabernet-Sauvignon, Marselan, Muscat of Alexandria, Muscat with Petit grains). The grounds are located on spot in charge of history: slopes bordering Canal of Midi, the blanks argilo-limestones of Oppidum d' Ensérune where the vine, since millenia plunged its roots and impregnated our culture as our Greek and Cathar ancestors testify some. There are also the plate of Vendres and its single soil between sea and scrubland, where the wind of north and the spray of the sea make the typicity of the vintages.
Very favorite for this IGP Coteaux of Libron Métamorphose 2012, with very balanced tannins, the connotations of blackcurrant, blackberry and pepper, mouth powerful and melted at the same time, a wine which takes a little time.   the vintage Allagresse 2012   is in the line, fleshy and scented, of color crimson and brilliant, with the powerful nose where the currant dominates, of mouth dense like Eurythmie 2012, fleshy, very scented (blackcurrant, humus, spices), a powerful wine, combining frame and roundness in mouth, while Symphonie of Cinq SENS 2012, with the powerful nose (plum, wild strawberry, humus…), is a wine with tannins flexible but quite present, vigorous and quite constructed.

After studies of agricultural engineers, this couple was installed in 1982 on the family property, and exploits to date, about thirty hectares. “We cultivate this winegrowing estate in biological culture, they specify-T, Nature mention and Progrès, since 1989, date where we passed in particular cellar. We have about thirty hectares of vines, with an annual production of 200,000 bottles. The winegrowing estate is in the middle of the hills of the edge of the Cevennes.”
Here is beautiful Languedoc Pioch of Oule Blanc 2012 (resulting from Demeter grapes, sowing by a leaven made starting from yeasts indigenous, fermentation out of new barrels for half ofVermentino, majority to 66%, and out of tanks for other half, like white Grenache, many bâtonnages…), with this very complex bouquet of fishing and ripe apricot, all in subtlety, with this persistent spiced key, a wine all in nuances. 
Excel Languedoc Arboussède red 2011, Carignan 39%, Grenache black 31%, Syrah 30%, with the flavors of spices and fruits black, balanced and generous, full and solid, fleshy, well in mouth like this red Plan de Savoulous 2010, smelling of good the ripe fruits and spices, a wine with quite firm but silky tannins.   rosé Arboussède 2013 is of delicate mouth. There is also this Vermentino 2013, resulting from Demeter grapes, mixing smoothness and structure, roundness and aromatic persistence, a tasty and very fine wine.

In charge of the First Classified High-class wines. Daumas Gassac, it is initially an exceptional soil discovered in the years 1970 by the large scientist Henry Enjalbert, holder of the pulpit of geography to the academy of Bordeaux, which discovered that there existed in the middle of the solid mass of Arboussas, under the thick coat of the scrubland, about forty hectares of a deep ground, drained perfectly and low in humus and vegetable matters, rich in mineral oxides (iron, copper, gold…). This soil of grèzes glacial accumulated by the winds during the glaciations of Riss, Mindel and Guntz, bring the three elements which condition the existence of a great wine: deep grounds where the roots of the vine can go down to feed in-depth; perfectly drained grounds where the roots of the vine never meet moisture, poor grounds which require vine suffering and effort to create the rare flavors… The exposure of the vineyard on Nord slopes accentuates the effect of the micro cold climate, while reducing, especially during the summer, the hours of sunning. It is this micro climate which delays the flowering of the vine of almost three weeks on the average of Languedoc.
If the discovery of the soil owes all to Henry Enjalbert, the procedures of wine making and ageing owe all to Emile Peynaud: wine making médocaine, long fermentations and macerations (three weeks), ageing wood during 12 to 15 month in barrels Burgundian and ofBordeaux from 1 to 7 years, joining with the albumin of egg, not of filtration
“The 2014 are one year marked by exceptional climatic conditions with much of dryness thus few grapes, which explains the 40% of harvest in less, Roman Guibert tells us. The vintage was early and proceeded during the first fortnight of September.
Daumas-Gassac Blanc 2014 is expressed with a beautiful grain in the line of the 2013. Pretty residual sugar balanced by this beautiful acidity what gives this beautiful balance. Beautiful expression of Viognier which gives notes of white flowers, apricot. The assembly remains unchanged: Chardonnay, Viognier, Petit Manseng and white Chenin
Daumas-Gassac red 2014 is always with ageing, it is one of the earliest years of these twenty last years. There is not the expression of ripe wines, beautiful balance between concentration-alcohol-acidity. What is striking, it is this beautiful freshness in the wines, moreover, it is a little our trademark with Daumas-Gassac. Beautiful expression of red small fruits, a little less notes of spices. They are wines very digestes thanks to the rather moderate alcohol level, a wine very accessible young person but who has also a good for ageing potential.”
For the moment, one excites our papillae with this large Mas de Daumas Gassac red 2012 (80% Cabernet-Sauvignon, plus 10 different type of vines), of an exceptional maturity, of beautiful intensity, with the flavors of cooked fruits red and spices, of a beautiful frame, with powerful tannins, of excellent guard.   Very beautiful 2011, race and coloured, concentrated, a very rich wine, of beautiful dense and deep color with violine reflections, with this very expressive black fruit nose (cherry, blackcurrant, wild blackberry), and of the slightly spiced keys, fleshy mouth. that it is obviously necessary to let open out.   the 2010, vigorous, velvety, very scented, with these notes of underwood, truffle and ripe fruits (wild strawberry, bilberry), of a beautiful width to the palate, is a powerful and very cordial wine, of very great evolution.  
Splendid white Daumas 2013.25%   Viognier, 25%   Chardonnay, 25%   Petit Manseng, 15%   white Chenin and 10% of a type of vine collection of which Courbu of Béarn, small Arvine of Valais, Rolle of ProvenceMarsanne of the Rhone and ten other extraordinary European varieties. Collect 100%   manual.   original Wine making including a pellicular maceration with 10° during five to seven days, fermentation under Inox with 20/25° during three weeks, alluvial filtration on fossil ground, then return in Inox; finally, the secondfiltration of safety on plate before the setting in bottles… A high-class wine race, single by its complexity specific of flavors, a very great expression with these nuances of Narcisse, pear, fishing… and always this splendid and delicate roasted side. The white 2012 is in the line of a color to the green reflections, the very aromatic nose marked by fruit flavors with white flesh, charmer, fat but with much of freshness and promptness in mouth, with notes of citrus fruits and exotic fruits with the palate, very balanced and very aromatic. The 2011, with the subtle scents of ripe yellow small fruits and toast, are a fatty but very fresh wine, of a beautiful final, of rich mouth, fineand persistent. 
Taste red Albaran, 50% Cabernet-Sauvignon, 50%   Syrah, ageing between 8 to 9 months out of barrels, intense color as in flavors, which smells of good the ripe fruits and spices, with quite firm and silky tannins at the same time.   In another style, for every day, one gives pleasure with red Guilhem, with the flavors of violet and of blackberry, strawberry in mouth, a wine “like formerly”.

In charge of the First Classified High-class wines. To the North-East of Carcassonne, in thecentral zone of Minervois, soil “Balcons of Aude says”, this medieval strengthened farm is a winegrowing estate of only one holding of 158 ha with 58 ha of vines including 45 planted in Minervois. It is on this winegrowing estate with the multiple Mediterranean scents that Roland Augustin, helped of his two sons Yann and Loïc, mature with a care meticulous person of the intense, complex and expressive wines. For better understanding the specificity of each vintage of Château Fabas, it is necessary to know of it the origins, type of vines and the type of ageing. The Winegrowing estate is pressed on a decoration of hillocks exposed to full midday, witness of the old relief to the very strong slopes where no culture is possible, only the pines of Alep and the Mediterranean vegetation is clutched on the red grounds of the hills. The vines are spread out over two levels over a reversed relief, the high terraces with the oldest grounds and the low terraces with the youngest grounds. The grounds are argilo-limestones, in the tops, the flint levels on the terraces, and the sandstone on the slopes. 
“In 1996, Roland Augustin tells us, we resold our 3 ha 80 of Champagne and sought a property to have more independence and to develop us. We sought a pleasant area and with the qualitative potential. We visited approximately 80 properties in the south of France… that took to us more than two years before finding Château Fabas. The exploitation counts 158 ha and we altered the vineyard to reach 63 ha including 45 in AOC and 18 ha out of type of vine wines. We much planted regional type of vines and replanted of frankCabernetSémillon and Petit Verdot, the type of vines which one sees more on the side of Bordeaux, a new challenge. With my two sons, we are a family structure, and that enables us to work with much flexibility and reactivity. We do not seek the year effect, I am ofChampagne origin and the Champagne one work like that. I created a Fabas taste and makes a point of preserving it to give a qualitative regularity to my wines. We sell 50% France and 50% export. We have a very cordial reception here, with a vault of sale, naps open all the year, it is a real advantage for the customers to be received by the family. We have in heart to maintain very quality-price positive ratios, vis-a-vis exorbitant prices in Languedoc, I think that our specificity should be kept: “without authenticity, not of emotion”. 
We made large investments on the level of the cellar, planted much these last years, arrive at 63 ha: it was necessary to increase the capacity of reception of the grapes! We thus bought a group of cold much more powerful, an automatic sort table to avoid to the maximum the herbaceous tastes and to be able to carry out longer macerations to extract as much as possible and, finally the purchase of a new pneumatic press.”
“The 2014 promises rather light wines to us, tells us Loïc Augustin, not too much alcohol what the consumers like, Syrahs were quite ripe, a wine which is more on the fruit, rather fond of delicacies and greedy. We did not push too much the extraction, we privilege the fruit. It will be one year very pleasant to taste quickly. In all manners, in Château Fabas, we do not like the wines too vigorous or rich in alcohol. The consumers, them also, seek more smoothness, of lightness, a wine not too powerful, rather aromatic. 
Today, the 2012 is with the sale, it is one year very fruity, all in roundness, a rather light wine of a beautiful freshness in mouth. MinervoisCuvée of Seigneur 2012 is superb, a fleshy wine, with more structure, marked notes of spices, candied fruits flavors. Minervois Moural 2012 is a for ageing wine with a little less structure than Cuvée of Seigneur, all in roundness, with the crystallized cherry flavors.
Minervois Serbolles 2013 is a rather light with drinking in the 3-4 years, flexible wine, very pleasant which agrees with many mets. Serbolles white 2014: with dominant of Vermentino what gives him these characteristic citrus fruits notes, is a rather fatty wine because we have to work on dregs, good acidity, good balance.”
There has been also this superb Minervois fermented Seigneur 2009, born from the complexity of type of vines established, for more than 30 years, exposed southern and controlled to 25 hl/ha of output. Syrah, 60%, dominant in this vintage, give on this soil of the very scented grapes. Grenache, 40% has a very major rooting which ensures good regularity and maturity to him. The wine is fleshy, dense, with these fruit jams scents which are found in mouth, and continues a very beautiful evolution.
Minervois Mourral 2011.35 hl/ha of output, Syrah (60%), Grenache (30%) and Mourvèdre (10%), very elegant, all in complexity, with spiced notes, is scented in mouth (humus, liquorice).   Thanks to ageing out of barrels, the wine is a beautiful length to the palate, powerful, for ageing. There is also this Minervois Serbolles red 2012: very fruity, very balanced, elegant, a “female” wine. 
Minervois Serbolles white 2012 (bases of Vermentino and white Grenache), with dominant with pear, white flowers and almond, of a beautiful persistence, dense in the nose like in mouth, interferes elegance and structure, very succeeded like Sauvignon, marked by its type of vine, where freshness prevails.

Acquisition by the Greuzard family in 2001 of this vineyard which counts 85 ha today. Herbe Sainte originates in “Herbo Santo”, which means in langue d'oc the whole of the aromatic plants.   at the end of 2005, purchase of the house of the Winegrowing estate of Herbe Sainte, the property is finally complete. The farming method privileges the practices limiting the parasitic risks, and the maintenance of a high biological diversity of the wine ecosystem and its neighborhoods, but also to reduce the water pollution, ground and air.
Very favorite for this Minervois Prestige red 2011, bronze medal Féminalise 2014, a wine with much of charm, these characteristic nuances where one finds raspberry, the violet and spices, fat, associating power and smoothness, which deserves to be waited some time. Minervois 2011, of nice color crimson, with pepper and blackberry notes, is of at the same time powerful and round mouth.   Minervois fermented Ambroisie 2011 (50% Syrah, 40% Carignan and 10%Grenache), of a beautiful garnet-red color, is an extremely well matured vintage, typified well, with the notes of underwood and blackberry, a spiced, intense and structured wine, of rich mouth. 
Taste Chardonnay 2013, of a beautiful yellow color clearly, with the connotations of fresh small fruits, very aromatic mouth.   ExcelsChardonnay 2012, high out of barrels, finely spiced, subtle and suave, balanced well, of good scented mouth, with the connotations of lemon and apple, frankly and expenses, all in mouth.

At the top.   the vineyard extends around the village from Pépieux and on the first slopes from the Noire mountain, in AOC Minervois. The climate is very dry there and hot but the wind which goes down from the mountain brings freshness and perfumes. The slopes of Pépieux offer an exceptional soil giving of the elegant wines having a freshness, an acidity noticed by the experts. It is there that was born the “wine from Cathar” which made the reputation of the village and one finds there today Syrahs with the flavors of blackcurrant and liquorice. The Winegrowing estate also profits from vines on Terroir of Livinière, classified first “name village” of the AOC of Languedoc. Benefitting from this exceptional situation, Renee and Benoît Laburthe returned to work the vines of their grandfather, in 1986.
“In 2014, Benoît Laburthe explains us, in spite of difficult conditions and thanks to our work upstream (disbudding, grape harvest in green), we could return a healthy and ripe harvest. That gives us a scented, rich wine with matter and a controlled, fresh and quite full degree.”
Typified well, Minervois Les Terres Fines 2013, of a beautiful frame, with matter and tannins, with the red flavors of fruits and underwood, color intense crimson, with the nose with notes of violet, nuances of scrubland and black cherry.   Minervois Beautiful Livinière fermented Les Cailloux Blancs red 2013.100% Syrah, well coloured and framed, with the nose dominated by the red small fruitswith core and of the accents of smoked, beautiful evolution. 
In the line, this other Minervois Livinière fermented Les Petits Cailloux red 2013, with the persistent and subtle nose at the same time, the notes of ripe small fruits (blackcurrant, morello cherry) and musk, with rich and quite molten tannins.   more flexible, easier to drink,Minervois Les Gravettes red 2014, is vigorous and feels currant, vinified well like pretty Minervois Perle of dew, Cinsault and Grenache, all in seduction, a wine where the blackberry joins raspberry, a mouth intense and refined at the same time.

Guy Ratier took again the family property in 2002, with the retirement of his parents. Remarkable Peak-Saint-Loup Sang of the Visigoth 2010, who owes his name with the pieces of production on which was discovered a cemetery Visigoth, grounds exposed argilo-limestones full southern, the assembly of Syrah and Grenache with 50%   each one being done with harvest, quite high out of barrels of oak, a wine with the cooked red fruit nose, of truffle and humus, framed, of a long final. The 2009 release a ripe, fleshy blackcurrant nose as it is needed, at the same time round and intense in mouth, of excellent evolution. Excel rosé Peak-Saint-Loup Fille de Gelone 2010, of which the name pays homage to Veronique Ratier, its wife, who is originating in Saint-Guilhem Désert, beautiful color, a frank wine, greedy, very accessible. Excel Les Treize Aureus d' Athaulf white 2010, rare (2600 bottles),   of harmonious mouth, all in smoothness, with the ripe yellow fruit nose, mixing flexibility and promptness, balanced very well. The Peak Saint-Wolf J… Truth 2012 (J for the Julien son, to celebrate its arrival on the winegrowing estate), is a new range, in the three colors, which proposes frank and fresh wines.
